CHEF TAKAFUMI FUKUMOTO

Mastering both classic French techniques and Japanese hospitality, Chef Fukumoto brings the essence of Miyazaki to every plate at his perpetually-booked restaurant. After honing his craft in prestigious French kitchens across Tokyo and New York, he returned to his roots in Miyazaki Prefecture to open Fukumoto Western Restaurant in 2019. His signature dish, a sublime Miyazaki beef stew, masterfully combines French culinary techniques with premium local ingredients. What began as a childhood passion for baking has evolved into a celebrated culinary philosophy that bridges traditional French cuisine with the rich bounty of Miyazaki's local ingredients.

CHEF TAKASHIRO TOGOE

At Kitamoro, where dinner reservations require a month's wait, Chef Takahiro Togoe has redefined Japanese dining in Miyazaki. Founded a decade ago when he was just 24, Kitaso embodies his unwavering commitment to four principles: local ingredients, additive-free cooking, from-scratch preparation, and made-to-order dishes. Beyond his culinary mastery, Chef Togoe's philosophy that "happy staff create delicious food" has fostered a unique restaurant culture where everyday ingredients are transformed into extraordinary experiences. From his hometown base, he aims to showcase Kyushu's culinary treasures to the world.
